basil-Parmesan sauce brings a mainstay dish to a new level.\par

Chicken in Basil Cream  (serves 4)\par

1/4 cup milk \par
1/4 cup dried bread crumbs\par
4 skinless, boneless chicken breasts\par
3 tbs. butter\par
1/2 cup chicken broth\par
1 cup half and half\par
1 (4 ounce) jar sliced pimento peppers, drained\par
1/2 cup grated Parmesan cheese\par
1/4 cup chopped fresh basil\par
salt & pepper to taste\par
\par
Place milk and bread crumbs in separate, shallow bowls. In skillet, heat =
butter or margarine to medium heat. Dip chicken in milk, then coat with =
crumbs. Cook in butter or margarine on both sides, until juices run =
clear (about 10 minutes).\par
Remove and keep warm.\par
\par
Add broth to skillet. Bring to a boil over medium heat, and stir to =
loosen browned bits from pan. Stir in cream and pimentos, stir for 1 =
minute. Reduce heat.\par
Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated =
through. \par
Pour mixture over chicken and serve.\par

I served it with Pasta--could use Rice.\par

Orange-Strawberry Salad\par
\par
     Dressing:\par
1 teaspoon grated Orange peel\par
1/4 cup Orange Juice\par
2 Tbs. Sugar\par
2 Tbs. Lemon Juice\par
1 Tbs. Chopped fresh Parsley\par
1 tbs. Vegetable Oil\par
1/2 tsp. Ground Mustard\par
pinch of salt\par
\par
     Salad\par
3 Oranges, peeled & sliced\par
1 cup sliced fresh Strawberries\par
6 cups Salad Greens\par
\par
1. In tightly covered container, shake all dressing ingredients\par
2. Serve Oranges and Strawberries on Salad Greens--serve with =
