     You have probably heard by now the intent of drilling two new wells where the irrigation controls are in Greenside. The wells, as proposed, will provide the water to irrigate all the common areas at the entrance signs at the right side of Hollowridge, the small entrance sign at the start of Crestline, the right side of Crestline all the way to Crestmont and all of Greenside whose lots have homes. (As homes are added they will also be included). Before you see the cost of this project let me say that I initially was not in favor of these wells, however, with the inclusion of the common areas and leaving the only common area to be served by public water will be the recreation area around the pool as we need the treated water to be in and around the pool by regulations. The savings over a 5 year period is in the thousands. I will not give the figures as there will be a letter explaining all of the details coming to you soon. I will say that your yearly dues will not be affected by this project as part of the payments that were normally made will be used to pay for the project. I think that after you review the details you too will support this money saving project. Several people have worked very hard on this project namely John Zoffoli, Barbara Lange, and Bob Lytle along with George Plotts, Alan Baker and Fred Gruen. Please give the letter a good looking over and see the benefits of this project for the whole community. Your vote will be required for this project to go ahead. Thank you!

We have received notice of the passing of Lyn Colbert on Monday evening, January 30. She and her husband Mike, have been long time residents of our community and have contributed so much. Our hearts and condolences go out to Mike. ( More info in the Obituary section)


PRESIDENT'S COMMENTS


Hello Laurel Ridge,
WELLS
Wells continue to be the focus. The Well Feasibility Committee and the Well Procurement Committee have put in countless hours determining:
1. What company to use to drill the wells.
2. What would be the best location for the wells?
3. Will it be possible to pipe the water under the road (Crestline or Hollow Ridge) to service the irrigation system we have in place, on the two roadways opposite the Greenside villas, that services the common area watering needs.
4. How much money would the estimated savings generate in a five year period
The Well Procurement Committee is getting very close to making a recommendation to the Board of Directors.

First Quarter Beautification Plans
1. The Board of Directors has approved the cleaning and re-grouting of the four Laurel Ridge signs. The work will be done by Copes Pool and Pavers. The four signs are the two on Forest Ridge Blvd. entrance, one at the Crestline entrance and the one located at the pool entrance. Planned for February completion date.
2. We plan to upgrade the landscaping at all four sign locations. This should happen in early March.
a. We have purchased new window blinds for the Recreation Center, should make a nice improvement in its appearance. We hope they will be up in time for the Chili Social.
b. We are currently pricing out cost of renovating the back area of the Recreation Center.
c. Pavers to create a seating area for our new benches.
d. Install low wall and some grading to prevent washout of new paver area.
e. Re-do horseshoe pits.
f. Addition of new shrubbery.
We are looking at the possibility of having this work completed sometime in March.

ANNUAL MEETING - BALLOTS  - BY ALICE CHAMPAGNE
   ANNUAL MEETING ALERT!! In February everyone will receive a mailing about the Annual Meeting of our Association. The mailing will include a ballot that lists the candidates who are seeking positions on the Board of Directors, as well as any issues to be voted upon by the property owners.
When you receive this mailing consider completing your ballot and returning it to the management office for counting prior to the Annual Meeting. If you wish to participate in possible nominations from the floor, you need to keep your ballot until the Annual Meeting. If ballots are received prior to the Annual Meeting, they can be counted. This decreases the time needed for counting during the meeting.

The 3 candidates are Bob Lytle, Ellen Marques and Fred Gruen.

Citrus County Genealogical Society

The Citrus County Genealogical Society has changed its regularly scheduled meeting to Saturday, February 18, 2012, 10:00am to 2:30pm at the Crystal River Moose Lodge . The Program will feature George G. Morgan, international lecturer and prolific author . His topics will cover “Alternative Records You May Never Have Considered, “Sidestep Genealogy” And “New Ways to Research Our Roots”. The cost for the seminar is $12.00 for members and $16.00 for non-members. Anyone interested in attending should contact Mary Ann at 382-5515 by February 13th.

The Hungry Rabbit - By Bunny Bucci


Hope you try these two soup recipes. The flavors are spicy, but nicely balanced. Great time of the year to get out the soup pot.

ITALIAN SAUSAGE SOUP

1 pound Italian Sausage
1 clove garlic, minced
2 ( 14 ounce ) cans Beef broth
1 ( 14.5 ounce ) can Italian-style stewed tomatoes
1 cup sliced carrots
1 cut up onion
1 ( 14.5 ounce) can Great Northern beans, drained
2 small zucchini, cubed
2 cups fresh spinach- packed, rinsed and torn
salt & pepper to taste

In stock pot or Dutch oven, brown sausages with garlic and onion.
Stir in broth, tomatoes and carrots, season with salt & pepper.
Reduce heat, cover, and simmer 15 minutes.

Stir in beans and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.
All you need is a salad and crusty bread.

EASY CASSOULET SOUP

Makes 6 to 8 servings
Made in Crock Pot-- Cook: 7 hrs. to 8 hrs, (low) or 3 to 4 hrs, (high)

1 cup chopped carrot ( 2 medium )
1 cup chopped large onion
3/4 cup chopped red or green sweet pepper (1medium )
2 15 (ounce ) can Cannelli beans ( white kidney ) or the Great Northern beans, rinsed and drained.
1/2 lb. skinless, boneless chicken thighs, cut into 1-inch pieces
1/2 pound cooked smoked turkey sausage or I use Italian sweet sausage, halved lengthwise and cut into 1/2 inch slices
1 Tbs. fresh Parsley
1 Tsp. dried thyme
1/8 Tsp. cayenne pepper
3 cloves garlic, minced
1 14 1/2 ounce can Italian-style stewed-tomatoes
1/2 cup of reduced sodium chicken broth


In a slow cooker, combine carrot, onion, and sweet pepper. Add drained beans, chicken, and sausage.
Sprinkle with parsley, thyme, cayenne pepper, and garlic. In a small bowl, stir together un drained tomatoes, broth and wine. Pour over chicken mixture.
Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 4 hrs.
